This Easy One-Pan Shredded Tortilla Chicken Pie packs a punch with flavor, versatility, and protein! Made in just 40 minutes, With its tortilla base, protein filling, and cheesy topping, it's a satisfying dish for breakfast, lunch, dinner, or snacks.


  • 3 eggs
  • ½ cup milk (any kind)
  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese (

  • 2 large tortillas (low-carb or regular)
  • 1 cup cooked, shredded chicken
  • 2 scallions, diced
  • Salt and pepper to taste


  1. Preheat & Prep: Set your oven to 350°F (175°C) and line an 8-inch cake pan with parchment paper.
  2. Toast & Shred Tortillas: Toast the tortillas in the preheating oven for 7 minutes, flipping halfway through. Let them cool slightly, then shred into small squares by hand.
