  • 1 teaspoon vanilla extract
  • ¼ cup maple syrup (adjust for desired sweetness)
  • 1 medium carrot, finely shredded
  • ¼ cup chopped walnuts

Frosting:

  • 4 ounces cream cheese, softened to room temperature
  • 2 tablespoons plain yogurt
  • 1 tablespoon powdered sugar

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C). Line an 8×4 inch loaf pan with parchment paper.
  2. Blend the Batter: In a blender or food processor, combine all bread ingredients except the shredded carrots and walnuts. Pulse until mostly smooth. Stir in the carrots and walnuts with a spatula.
