You are swapping a traditional pizza crust with this cloud bread crust, so treat it like you would with any pizza! 

The Ingredients

  • Egg Whites: Ensure the egg whites are at room temperature, avoiding the use of carton egg whites. Save the yolks for other recipes like homemade mayonnaise or low-carb custard.
  • Cornstarch or Coconut Flour: Incorporate either cornstarch or coconut flour to maintain the pizza’s shape during cooking.
  • Italian Seasoning: Use Italian seasoning, also known as Italian mixed or dried herbs, to infuse the crust with delightful flavors.
  • Toppings of Choice: Personalize your pizza with a simple pizza sauce and an array of your favorite toppings for a delicious and customized culinary experience.

The Instructions

Begin by placing the egg whites in a mixing bowl. Utilize a hand mixer to beat the egg whites at medium speed until soft-medium peaks form. Gradually incorporate the cornstarch or coconut flour into the mixture, continuing to mix until relatively stiff peaks form, and the mixture attains a glossy texture.

I’ve made this recipe countless times and each time it gets even better- Here are some fail-proof tips to make the best darn cloud pizza. 

Enhance the batter with seasonings of your choice. If you opt for an unseasoned batter, make sure your toppings are rich in flavor. I recommend incorporating a blend of Italian seasonings and/or garlic salt for an extra taste boost.

Apply a brush of oil or butter to the edges—a secret trick of mine! This imparts an additional golden hue and a delightful chewiness to the crust.

Be generous with flavorful toppings. Recognizing that the crust is unique, load up on delicious toppings such as olives, sun-dried tomatoes, and a combination of two cheeses to elevate the overall taste experience.

Storing, freezing, and storing the crust

I recommend enjoying this pizza fresh as it tastes best this way! However, if you’d like to make this as part of meal prep or frozen for quick low carb meals!

  • Storage: Leftovers should be refrigerated, covered, and will maintain quality for up to 3 days.
  • Freezing:For cooked crusts without toppings, wrap them in plastic wrap multiple times, eliminating air pockets. These plain crusts can be stored in the freezer for up to 6 months. When ready to enjoy, thaw to room temperature, add toppings, then bake in the oven. For an already topped pizza, store slices in a shallow container in the freezer for up to 2 months.
  • Reheating:Reheat either in an air fryer or a preheated oven until the edges are crispy. Avoid microwaving the pizza, as it may result in soggy crusts and a loss of flavor.

Ingredients:

4 large egg whites, at room temperature (*See notes)
1 tablespoon cornstarch or coconut flour
1 teaspoon Italian herbs
1/4 teaspoon salt, to taste
For the Toppings:

2 tablespoons keto pizza sauce
2 tablespoons shredded cheese
1 tablespoon olives


Instructions:

Preheat the oven to 180C/350F. Line a large baking tray with parchment paper and set aside.

In a large mixing bowl, add the egg whites. Using a hand mixer, beat the egg whites until medium peaks form. Add the cornstarch or coconut flour and continue beating until stiff peaks form.

Transfer the mixture into the lined tray. Using the back of a spoon, shape it into a circular pizza. Place it in the oven and bake for 15-17 minutes, until golden on top.

Remove the crust from the oven. Top with sauce, shredded cheese, and other toppings of choice. Spray the crust with cooking spray and place it back in the oven for 5-10 minutes, until the cheese has melted.

Remove the cloud pizza from the oven, slice, and serve immediately.
