  • 4 bone-in, skin-on chicken thighs
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 tablespoons honey (

  • 1 large sweet potato, peeled and cut into chunks
  • 1 red onion, cut into wedges
  • 1/2 teaspoon chili powder (optional)
  • 1/2 teaspoon Italian seasoning (optional)
  • Fresh thyme sprigs (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken thighs generously with salt and pepper.
  2. Heat olive oil and butter in a large oven-safe skillet over medium heat. Sear chicken for 3 minutes per side, or until golden brown.
  3. Remove chicken from the pan and set aside.
  4. In the same pan, whisk together honey, Dijon mustard, chili powder (if using), and Italian seasoning (if using).
  5. Add sweet potato and red onion wedges to the pan, tossing to coat in the sauce.



  6. Arrange chicken pieces back on top of the vegetables.
  7. Transfer the pan to the preheated oven and roast for 15-20 minutes, or until chicken is cooked through and vegetables are tender.
  8. Garnish with fresh thyme sprigs (optional) and serve immediately.

Notes

  • For a thicker sauce, remove the chicken and vegetables from the pan after roasting. Bring the pan juices to a simmer on the stovetop and cook until slightly reduced.
  • Substitute chicken breasts for thighs, adjusting cooking time as needed.
  • Add other vegetables like broccoli florets or bell peppers for extra flavor and variety.
  • If you don’t have Dijon mustard, substitute with a squeeze of lemon juice.
