Description

This Healthy and High-Protein Queso Chicken Mac n’ Cheese recipe is a delicious and hearty dish that combines tender chicken, flavorful spices, and a creamy queso sauce with pasta.


Ingredients

Scale
  • 32 oz chicken breast
  • 120 g red enchilada sauce
  • 80 g green chiles ( (3 tablespoons))
  • 14 oz (400g) can of fire roasted tomatoes
  • 2 tablespoons garlic purée
  • 2 tsp onion powder
  • 1 tablespoon salt
  • 1 tsp black pepper
  • 1/2 tsp cayenne
  • 2 orange bell peppers
  • 2 red bell peppers
  • 1 onion, diced/roasted
  • 672 g pasta, cooked to 50% (cook for half the time shown on the box)



Blended Queso Sauce:

  • 800 g 2% cottage cheese
  • 100 g 1/3 fat cream cheese
  • 150 g extra sharp cheddar cheese*
  • 30 g cheddar powder
  • 120 g red enchilada sauce
  • 150 g milk
  • Salt & pepper to taste

Instructions

  1. In a slow cooker, combine chicken breast, red enchilada sauce, green chiles, fire roasted tomatoes, garlic purée, onion powder, salt, black pepper, cayenne, orange bell peppers, red bell peppers, and onion.
  2. Cook on high for 2-3 hours or low for 3-4 hours.
  3. Add the cooked pasta to the slow cooker and mix well.



  4. In a blender, combine cottage cheese, cream cheese, extra sharp cheddar cheese, cheddar powder, red enchilada sauce, milk, salt, and pepper. Blend until smooth.
  5. Pour the blended queso sauce over the chicken and pasta mixture in the slow cooker.
  6. Cover and cook on high for 15-20 minutes.
  7. Serve hot and enjoy the delicious Queso Chicken Mac n’ Cheese!
