Ingredients

 for 3 Portions

  • 3 medium chicken breasts (120g each)
  • Baby potatoes ((250g per portion))
  • 30 g self-raising flour
  • Spinach
  • 3 tbsp olive oil
  • 1/2 onion
  • Broccoli ((added at the end))
  • Seasonings: Garlic, paprika, salt, pepper, mixed herbs, parsley



Sauce:

  • 80 ml double cream
  • Water or vegetable stock (chicken or veg)
  • 30 g grated mozzarella
  • Seasonings: Salt, pepper, mixed herbs, parsley

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with garlic, paprika, salt, pepper, mixed herbs, and parsley.
  3. Heat olive oil in a skillet over medium heat and brown the seasoned chicken breasts on both sides. Remove from the skillet and set aside.
  4. In the same skillet, sauté the onion until translucent.
  5. Add the self-raising flour and cook for a minute to make a roux.
  6. Slowly pour in the double cream and water/vegetable stock while stirring to create a creamy sauce.
  7. Stir in the grated mozzarella cheese until melted and well combined.



  8. In a baking dish, layer the baby potatoes, spinach, and browned chicken breasts.
  9. Pour the creamy sauce over the chicken and potatoes, ensuring everything is well coated.
  10. Cover the baking dish with foil and bake in the preheated oven for about 30-40 minutes.
  11. Remove the foil, add the broccoli on top, and bake for an additional 10-15 minutes until the chicken is cooked through and the potatoes are tender.
