  • 2 tsp garlic

  • 300 ml water

For the Pasta:

  • 672 g pasta (cooked to 50% doneness)
  • ½ cup reserved pasta water

For the Blended Sauce:

  • 600 g 2% blended cottage cheese
  • 120 g 1/3 fat cream cheese
  • 50 g parmigiano reggiano
  • 50 g mozzarella
  • 50 g honey
  • 300 ml milk
  • Salt and pepper to taste

Topping:

  • Fresh chives

Instructions

  1. In a slow cooker, combine the chicken breast, adobo sauce, minced chipotle peppers, garlic, onion, salt, chicken bouillon, and water. Cook on high for 2-3 hours or low for 5-6 hours until the chicken is tender and fully cooked. Shred the cooked chicken using two forks.
  2. Cook the pasta to 50% doneness and reserve about 1/2 cup of pasta water.
  3. In a blender, combine the blended cottage cheese, cream cheese, parmigiano reggiano, mozzarella, honey, milk, salt, and pepper. Blend until smooth.



  4. Mix the shredded chicken, cooked pasta, and blended sauce together. Cook the mixture for 15-20 minutes until heated through.
  5. Serve the Cheesy Chipotle Chicken Pasta topped with fresh chives.
  6. To store, divide into 10 equal-sized containers and freeze. When ready to eat, microwave for ~4 minutes to reheat.
