Ingredients

  • 3/4 cup rolled oats
  • 2 medium ripe bananas
  • 1/4 cup almond butter (or peanut butter, sunflower seed butter)
  • 2 eggs
  • 1 tsp vanilla extract (

  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat & Prepare: Preheat oven to 350°F (175°C). Line a 9×5" loaf pan with parchment paper.
  2. Grind Oats: In a food processor or blender, grind oats into a flour-like consistency.
  3. Blend Wet Ingredients: Add bananas, nut butter, eggs, sugar, vanilla, cinnamon, baking powder, baking soda, and salt. Blend until smooth.



  4. Fold in Chocolate: Stir in chocolate chips (optional).
  5. Bake & Cool: Transfer batter to the pan and bake for 45-50 minutes, or until a toothpick inserted comes out clean. Loosely cover for the last 10 minutes if browning too quickly. Cool on a wire rack for 15 minutes before slicing.
