The Secret:

Bigger is better! Skip the tiny florets and opt for medium to large pieces, even combining two small buds if needed.

Cooking Tip:

Boil and blanch broccoli: Bring a pot of water to a boil, add broccoli, and salt. Keep an eye on it! You want fork-tender, not mushy florets.
