Ingredients
  

  • sheets nori paper
  • ½ cups  cooked sushi rice, cooled

salmon:

  • lb  salmon, skin removed + cubed small
  • 2 tbs sesame oil (or olive oil)
  •  tbs low sodium soy sauce

  • 1 tbs honey
  • scallions, diced
  • ½ tsp each garlic powder, onion powder, chili powder, paprika, dried oregano
  • salt to taste

spicy mayo:

  • ¼ cup kewpie mayo
  • 2 tsp Sriracha sauce
  • 1 tsp  honey

toppings:

  • ½ avocado, diced small
  • 2  tsp  black sesame seeds

Instructions
 

  • Preheat the oven to 400°F. Cut the nori sheets into four equal squares using scissors.
  • In a bowl, mix the cubed salmon with all the other salmon marinade ingredients. Allow it to marinate for up to 4 hours.
  • Place approximately 1 heaping tablespoon of rice onto each nori square, spreading it slightly. Transfer the square to the muffin slot, gently pressing down to center the rice while allowing the edges to come up along the sides of the slot.
  • Fill each muffin slot with 4-5 marinated salmon cubes. Bake in the oven for 15-17 minutes. Broil for an additional 1-2 minutes if a golden finish on the salmon is desired.
  • Allow the muffins to cool slightly, then top them with diced avocado, sesame seeds, and a drizzle of spicy mayo.
