  • 4 Onions
  • 100 cloves of garlic
  • 1” of ginger
  • 2 tablespoons of butter or olive oil
  • 1 bay leaf (optional)
  • 1 pinch of cayenne (optional)
  • 2 teaspoons of rosemary (optional)
  • 2 teaspoons chopped thyme (optional)
  • 1 stalk of lemon grass (optional)
  • 2” of turmeric (optional)
  • 1 quart of chicken stock (if not making base, use 4 quarts)
  • 1 can of coconut milk
  • 3 potatoes, chopped

Instructions:

  • Preheat Oven:
    • Set the oven to 375°F.
    • Place garlic in a small glass casserole dish, drizzle with olive oil, and cover with foil. Roast for about 40 minutes or until garlic is easily mushed with a fork.
  • Caramelize Onions:
    • While garlic is roasting, slice onions and caramelize with butter. Sprinkle salt and pepper.
